Why eight and not four

Because at this level the day is a crew day. A wall crew above the Douro, a quarry floor in the Ardennes, a forge, a cave in the limestone of the Picos: each of these stops its own work for the hours it gives you, and eight travellers is the number at which stopping is worth doing. That is a harder condition than mark two, and the office says so rather than dressing it up. The upside is that these are the days with the most actual work in them, done at the pace the work takes, by people who will still be doing it after you have gone home. The condition and the substance are the same fact seen from two sides.

Booking early is the only lever

Eight is not a crowd, but it is eight separate decisions, and the days that reach it tend to reach it two or three months out rather than two weeks. So the one thing that helps is asking early and asking with your own number attached. A message that says four of us tends to be followed by the other four; a message that says one, six weeks out, usually is not. The office will tell you the count as it stands whenever you ask, and will tell you the date the person running the day decides. What it will not do is estimate the odds for you, because it has no honest basis for a figure and you would reasonably treat one as a promise.

Can we bring our own eight?

Eight travellers arriving as one party meets the condition outright, so the reservation is confirmed as soon as the person running the day answers, and no waiting period applies. Say the number in the first message. A party of six is also worth naming, because two more is a much smaller gap to close.

Can you tell us it will definitely run?

No, and any office that says otherwise is guessing on your behalf. What this office will do is give you the count whenever you ask for it, name the date the decision falls, and write to you that day whichever way it lands. If eight is not reached, nothing is owed and nothing is refunded, because nothing was taken from you in the first place.
